Rustic seafood soup

Simmering on the stove.

Wanted to give you an update on the rustic seafood soup hubby made for Valentine’s Day dinner.  This soup was super simple.  As we do with most recipes, we found a seafood soup recipe that we liked and adapted it (based on what ingredients we had in the kitchen). We started by sauteing onions, celery and carrots.

A little toast on the side. Lovely!

Added water and clam juice for stock along with seafood.  We chose shrimp, little neck clams and mussels though you could use any variety of seafood you like.  One roughly chopped potato along with some tomato quarters went in the pot.  Plus, all sorts of seasonings.  A little leftover bacon from breakfast, chopped. Salt and pepper of course. A little bay leaf. Some red pepper flakes for a little heat. Maybe some basil?  And a handful of other seasonings to taste.
